Monkey Cake

What do you do when the patriarch of the house is off on a Wednesday evening playing softball?  You grab the preschooler living in your house and create a new dessert.

Enter, Monkey Cake.

Ingredients:

1 box yellow cake mix (I used Pillsbury with pudding mixed in)
3 eggs
1/3 cup oil (or applesauce)
1 cup water
about a half cup of dark Coco powder (super technical, huh?)
3 super ripe bananas, mashed
about a quarter bag of dark chocolate chips (again, technical)

Mix the cake mix, eggs, oil/applesauce and water. Add the coco powder and beat with hand mixer. Add bananas and beat until smooth. Pour in 9x13 pan (or two smaller cake pans, or cupcakes, or loaf pans... whatev's) and sprinkle with the chocolate chips (this is the best job for the Preschooler so you can get dinner together). Bake per instructions on the box of the cake mix.

After about 35 minutes, I pulled out this gorgeous, chocolatey, melty moist, fluffy cake.  We let it cool about 36 seconds and cut into the beast. Serve in large small bowls topped with some whipped cream (or hot fudge, ice cream, raspberries, anything that tickles your fancy), and enjoy.

Yum, people. Yum.
